Ingredients
1 can chickpeas (drained and rinsed)
1 can black beans (drained and rinsed)
1 cucumber (diced)
1 cup cherry tomatoes (halved)
Olive oil and lemon juice (for dressing)
Preparation
Step 1
In a bowl, combine chickpeas, beans, cucumber, and tomatoes.
Step 2
Drizzle with olive oil and lemon juice.
Step 3
Toss well and serve with whole grain crackers on the side.
Tip: Add a sprinkle of dried herbs for extra flavor.
